Strawberries and Cream Quinoa

Quinoa (pronounced Keeen-Wahhhh) is finally starting to get the recognition that it deserves. This grain is a favorite amongst vegetarians and vegans alike, as it serves as an excellent source of protein, is naturally low in fat, high in fiber, and an added perk---it's a good source of iron, too! So, it really touches upon all of the common "weaknesses" of the typical vegetarian diet.

But, Quinoa is not just for those who prefer to avoid animal products! Everyone can benefit by adding this superfood to their diet, but most of us aren't so sure what to do with it!

Here's a great way to get a protein rich breakfast, without constantly relying upon eggs to do the job....Check it out!

Strawberries and Cream Quinoa


Ingredients:

3/4 c. Quinoa
2 c. Strawberries, quartered
2 Tbsp. Agave, honey, or sugar in the raw
1/4 tsp. Ground cinnamon
pinch salt
1/4 c. Fat-free half and half
1/2 tsp. Vanilla

Here's what you do:

  1. Rinse Quinoa and prepare according to package. Drain well and keep warm.
  2. In a large saucepan, combine strawberries, sweetener, cinnamon and salt. Heat over low-med heat until warmed. Stir in the half and half and heat through. Add in the quinoa and vanilla.
  3. Divide into 4 bowls and ENJOY!
***Next time, try a different fruit! Blueberries are great, too!
