Lentil and Ham Soup
Ingredients:
4 cups of reduced sodium chicken broth
2 cups water
1.5 cups chopped celery
1.5 cups sliced carrots
1 medium onion, chopped
1 bag lentils, rinsed and drained
6 ounces of cooked ham, diced (I like canadian bacon, too)
1.5 tsp. Dried thyme
3 cups fresh baby spinach
plain yogurt and/or parmesan cheese for garnish
Procedure:
In a 4-5 qt. slow cooker, combine the broth, water, celery, carrots, onion, lentils ham and thyme.
Cover and cook on low for 7-8 hours, or on high for 3-4 hours.
Stir in the spinach just before serving, and garnish with yogurt or parmesan.
