Easiest Vegetarian Crock Pot Chili

Easiest Vegetarian Crock Pot Chili

Ingredients:
1 T. vegetable oil
1 c. finely chopped onion
1 c. chopped bell pepper
1 clove garlic, chopped
1 28 oz. can of crushed tomatoes
1 15 oz can diced tomatoes
1 15 oz can black beans, rinsed and drained
1 15 oz can red kidney beans
1 15 oz can garbanzo beans, rinsed and drained
1/2 c. frozen corn
1/4 c. tomato paste
1 tsp. ground cumin
1 tsp. dried basil 
1 tsp. chili powder
1/4 tsp black pepper 

*a bit of minced jalapeño pepper, if desired….red pepper works, too!

plain greek yogurt, chives, cheddar…for garnish

Heat oil in a large skillet over medium-high heat until hot. Add onion, bell pepper, jalapeño (if using) and garlic. Cook and stir until tender. Transfer veggies to slow cooker and add the remaining ingredients, with exception of the garnishes. Mix and cook on LOW for 4-5 hours. YUM!
