Asian Lettuce Wraps

Have you ever tasted the Lettuce Wraps from PF Cheng's restaurant? OH MY. So, so yummy. Unfortunately, when we eat out--we have no way of REALLY knowing how our food is prepared--how much oil is used, cooking techniques, etc. Further, it's pretty expensive to eat out often.

Good news! Now, we can have a light, healthy, and equally as delicious version of the restaurant favorite--right in your own kitchen! Better yet, this recipe is super easy! Check it out!


Ingredients:

1/4 c. Hoisin sauce
1 Tbs. soy sauce
1 Tbsp. Vegetable Oil
1 lb. ground chicken (turkey works, too!)
2 Large carrots, peeled and finely diced
1 red bell pepper, finely diced
3 cloves garlic, finely chopped
1 small onion, chopped
salt and pepper, to taste
1/2 tsp freshly grated ginger, optional
4 scallions, whites and greens separated and chopped
1 large head butter lettuce, leaves washed, dried and separated

Instructions:

  1. In a small bowl, combine the hoisin sauce, soy sauce and 1/3 cup warm water.
  2. In a large skillet, heat 1 Tbs oil over medium-high heat. Add the chicken and cook, breaking it apart until brown.
  3. Reduce the heat to medium, add the carrot and bell pepper for about 2 minutes, stirring. Then, add the garlic, onion, and scallion WHITES. Cook an additional minute. Season with salt, pepper, and ginger. Add in the hoisin mixture and cook until the sauce begins to thicken a bit--about a minute or two.
  4. Divide the lettuce leaves among 4 plates. Serve a nice pile of the chicken of the mixture on the leaves or on the side. Sprinkle mixture with the scallion greens for garnish. 
Serve with your favorite asian dipping sauce, mandarin oranges, and/or brown rice.
