Ingredients:
1/4 c. Hoisin sauce
1 Tbs. soy sauce
1 Tbsp. Vegetable Oil
1 lb. ground chicken (turkey works, too!)
2 Large carrots, peeled and finely diced
1 red bell pepper, finely diced
3 cloves garlic, finely chopped
1 small onion, chopped
salt and pepper, to taste
1/2 tsp freshly grated ginger, optional
4 scallions, whites and greens separated and chopped
1 large head butter lettuce, leaves washed, dried and separated
Instructions:
- In a small bowl, combine the hoisin sauce, soy sauce and 1/3 cup warm water.
- In a large skillet, heat 1 Tbs oil over medium-high heat. Add the chicken and cook, breaking it apart until brown.
- Reduce the heat to medium, add the carrot and bell pepper for about 2 minutes, stirring. Then, add the garlic, onion, and scallion WHITES. Cook an additional minute. Season with salt, pepper, and ginger. Add in the hoisin mixture and cook until the sauce begins to thicken a bit--about a minute or two.
- Divide the lettuce leaves among 4 plates. Serve a nice pile of the chicken of the mixture on the leaves or on the side. Sprinkle mixture with the scallion greens for garnish.
Serve with your favorite asian dipping sauce, mandarin oranges, and/or brown rice.
